How Bulk Purchases Work
Quarter Beef - Half Beef - Half Pig - Whole Pig
We sell custom cut beef and pork once a year in the fall (ready for pickup before Thanksgiving). We are currently sold out for FALL 2024. Email us to join the 2025 waitlist!
How It Works
You will work with the butcher at Eickman’s Processing to customize the cuts of meat you get out of your quarter beef or half pig. After the meat is aged and cut, you will pick up your order directly from the processor. Any cuts you don’t want will be added to the grind and come back to your freezer as ground beef, sausage, brats, etc.
Bulk Prices
You will get two invoices. Here’s why:
Pay the farmer: We charge $3.85/lb hanging weight for beef (average 180 lbs per quarter) and $3.50/lb hanging weight for pork (average 110 lbs per half pig). We take a non-refundable deposit to hold your order and send an invoice with the final total once the butcher has your order and gives us an exact weight.
Pay the butcher: Processing (cutting, freezing & packaging fee) is paid separately to Eickman’s Processing upon pickup. This cost varies depending on your cut preferences. Average processing cost is 80¢/lb.

We are currently SOLD OUT for 2024 beef! We still have a few orders left for pork. Email us to join the 2025 waitlist for beef. We will email you next year when sales open up and you can make a deposit to secure your order at that time.

About our beef
All of our local beef is pasture-raised and grain-finished. That means the animals have access to pastures and grass hay throughout their lives and we add organic grain to their diet in the later stages to improve the marbling of the meat. Adding grain to the animals’ diet is how we make sure we are supplying you with high-quality beef! No added hormones.
About Our Pork
Our pigs are pasture-raised with no added hormones. Just like our cattle, most of the pigs in our care are never given antibiotics. However, if an animal becomes sick and our veterinarian recommends an antibiotic treatment, that is the humane thing to do. If antibiotics are given to an animal, there are strict withdrawal periods we follow to ensure the antibiotics clear the animal’s system before they go to market.

Our prices are based on the final weight of the animal, which varies. Your custom processing choices (how you have the meat cut/prepared) will also vary; for example it will cost more if you wan to have meat smoked or pre-made into burger patties.
Having said that, here is our best estimate for total cost:
1/4 beef avg hanging weight is 175 lbs @ $3.85/lb = $673.75 (paid to the farmer) + $160 processing fee (paid to butcher)
1/2 pig avg hanging weight 110 lbs @ $3.50/lb = $385 (paid to farmer) + $120 processing fee (paid to butcher)

We work with lots of first-timers, and we know buying farm direct is very different than going to the grocery store! We're here to answer any questions you have along the way.
The butcher will help you figure out your custom cut order. They can walk you through all of the options, and you can say "yes" or "no" based on your preferences.
Anything you don't want will come back to your freezer as ground meat (burgers, sausage, etc).
The cost of custom processing varies based on your choices. For example, it costs an extra $1/lb to have your ground beef made into burger patties instead of just tubes, smoking meats costs extra, etc.

You work directly with the butcher to customize your cuts! That means you get the things you want, and the rest gets put into the grind and made into ground beef, burgers, hot dogs, etc. You don't have to take home anything you don't like! The butcher will go through a cut sheet with you and make a note of your preferences.

After processing (cutting, trimming fat, removing bones, etc.), you will be taking home ~100 lbs of meat per quarter beef or half pig.
That probably wont fit in a standard fridge-freezer combo, so we recommend having a chest or upright freezer to store your meat in!
